Left Bank or Right Bank? Left Bank wines (Médoc, Pauillac, Saint-Julien, Margaux, Pessac-Léognan) are led by Cabernet Sauvignon: firmer, blackcurrant and cedar, built to age. Right Bank wines (Saint-Émilion, Pomerol) are led by Merlot: softer, plummier and more approachable young. For a dinner tonight, a Right Bank or a mature Left Bank bottle is the safer choice.
Everyday or classed growth? A Bordeaux Supérieur or petit château such as Château Les Maurins or Château Mahon-Laville is a reliable weeknight red. Grand Cru Classé Saint-Émilion, second wines of the great estates (La Chapelle de la Mission Haut-Brion, Canon) and classed growths from Pauillac and Margaux are the ones to give, cellar or open for an occasion. Half bottles let you try a serious name without committing to a full 75cl.
Which vintages? 2015, 2016, 2018, 2019 and 2020 were all strong years. Younger wines from these vintages will keep improving; wines with ten or more years of age are drinking well now.
Serve red Bordeaux at 16–18°C. Younger, tannic wines benefit from an hour in a decanter; older bottles need only gentle decanting to remove sediment. Classic pairings are roast lamb, beef, duck and hard cheeses.
