      The Wine

Garrus is the top of Château d’Esclans’s range and Sacha Lichine’s statement wine — the bottling that did most to change how the world thinks about Provence rosé. It comes from old-vine Grenache and Rolle (Vermentino), fruit that yields little and concentrates hard.

What sets it apart is the ageing: eleven months in French oak barrels, unusual for any rosé and unheard of for most. That time in wood builds genuine depth, complexity and structure, so the wine drinks less like a summer refresher and more like a fine white Burgundy — red fruit and citrus framed by subtle oak, with real length.

      Tasting Notes

NoseRed fruit and citrus with subtle oak and a fine mineral thread.
PalateStructured and layered — concentrated red berry and citrus with depth from barrel ageing.
      FinishLong, refined and structured.

Serve with: lobster, turbot and richer fish dishes, roast poultry, or veal — food that would flatten a lighter rosé.

      Questions

Why age a rosé for eleven months in oak?

Because the fruit can carry it. Old-vine concentration plus barrel ageing produces a rosé with the depth and structure normally associated with serious white wine.

What temperature should I serve it at?

10–12°C. Serving Garrus ice-cold hides most of what you are paying for — treat it like a fine white Burgundy.

Should I use a proper wine glass?

Yes — a white Burgundy glass rather than a small rosé glass. It needs the room.
