Only around 1% of the Manufacture’s annual production meets the grade — large, golden-brown pearls from sturgeon raised over twelve years. Scarcity here is a selection outcome, not a marketing decision.
Is golden caviar better?
Paler, golden grades are rarer, which is why they command more. Whether they taste better is a matter of preference — Héritage is distinguished by its layered aromatic complexity as much as its colour.
How should I serve it?
Chilled, from the tin, with a mother of pearl, bone or horn spoon. Metal reacts with the roe. Anything else on the plate is competing with a caviar that does not need help.
