Billecart-Salmon Sous Bois — a rare Champagne vinified entirely in oak, layered, textured and quietly powerful.
Founded in 1818, Billecart-Salmon is celebrated for finesse — and Sous Bois shows its adventurous side. Vinified wholly in wood, it gains an extra dimension of complexity over its Chardonnay, Pinot Noir and Pinot Meunier fruit.
“Sous bois” means “under wood” — a nod to the oak vinification that sets this cuvée apart. The result is richer and more vinous than a classic brut, with a creamy texture and toasty depth balanced by Billecart’s signature freshness.
