Hand-harvested grapes undergo whole-bunch pressing and primary fermentation in stainless steel, followed by secondary bottle fermentation and a minimum 4 years ageing on lees in underground cellars (disgorged November 2021). The exceptional 2016 vintage—marked by a cool spring, smaller yields, and a long, sunny ripening period—delivers concentrated fruit intensity balanced by vibrant natural acidity.
