      Bolivia's national spirit: a brandy distilled from Muscat of Alexandria grapes grown high in the Andes. It has a protected denomination of origin, so only Bolivian production from those altitudes may use the name.
      How is it different from pisco?
      Both are unaged grape spirits, but singani uses only Muscat of Alexandria and only from high-altitude Bolivian vineyards. The result is markedly more floral and softer on the palate — orange blossom and white peach rather than the sharper, more herbal edge of many piscos.
      What is the Soderbergh connection?
      The filmmaker discovered singani while shooting in Bolivia in 2007, could not buy it back home, and spent years importing it himself. The 63 in the name is his birth year. It is now stocked by cocktail bars that had never heard of the category.
