Why do the pearls vary in colour?
Oscietra naturally ranges from deep brown to gold depending on the individual fish and its age. Paler, golden grades are rarer, but colour is not in itself a measure of quality.
Is Oscietra a step down from Beluga?
No — it is a different thing. Smaller and firmer, with a nuttiness Beluga does not have. Many people who have tried both prefer Oscietra.
Which spoon should I use?
Mother of pearl, bone or horn. Metal reacts with the roe and gives it a tinny edge, which is why caviar has never been served with a silver spoon.
