The nose opens with a salted caramel sweetness that belies what's coming: a palate of genuine ferocity, all black pepper, burning peat and the kind of maritime brine that makes you feel like the Atlantic is in the room. The finish is extraordinary — dry, long and warming, with a slow fade of smoke and sea that lingers for minutes. We recommend it neat, with a single drop of cold water to open up the fruit notes.
