Using 100% locally grown Cotswolds barley, the process begins with mashing and a full 4-day fermentation for rich, deep flavour development, followed by double distillation in bespoke copper pot stills designed specifically for the distillery. Matured exclusively in American oak ex-bourbon barrels, this single malt captures the pure, elegant character of the Cotswolds terroir. It pours a warm golden hue with inviting aromas of vanilla custard, honey, orchard fruits (apple, pear), toasted oak, and subtle malt sweetness. On the palate, it is smooth and balanced with creamy vanilla, butterscotch, fresh green apple, gentle spice, and soft cereal notes, leading to a clean, medium-length finish with lingering malt and light oak.
