Wiston Estate Blanc de Blancs NV — 100% Chardonnay off the chalk of the South Downs, Coquard-pressed and part barrel-fermented.
Wiston is a family-run estate on the chalky South Downs escarpment in West Sussex, close enough to the sea to feel it in the wine. Vines went in during 2006 and the first wines followed in 2008; the house has specialised in classic-method sparkling ever since, using traditional varieties and techniques drawn from Champagne.
This Blanc de Blancs is 100% Chardonnay, blended across vintages for consistency and depth — the current release built primarily on 80% base wine from the warm, ripe 2018 vintage, with reserve wines going back to 2009. Grapes are whole-bunch pressed in a Coquard basket press, then fermented in a mix of stainless steel and Burgundy oak barrels before bottle fermentation and over two years on lees. Disgorged from Spring 2021, at a low 9 g/l dosage.
Serve with: oysters, seafood, goat’s cheese — or simply as an aperitif. Drink now through 2026 and beyond.

Barrel fermentation adds texture and complexity that stainless steel alone will not give. Here it rounds out the Chardonnay without covering the chalky minerality.
