Bond Melbury 2016 in magnum — blackcurrant, cedar and silky tannin from one of Napa’s great single-vineyard Cabernets.
Melbury is one of the designated hillside vineyards Bond bottles under its own name — the house works site by site rather than blending across Napa, on the conviction that a single piece of ground says more than a composite. The 2016 is Cabernet Sauvignon-led with contributions from other Bordeaux varieties, aged 22 months in French oak barrels.
The bouquet is generous and precise: blackcurrant, black cherry and plum with cedar and a lift of vanilla. The palate is plush and layered, silky tannins framing dark fruit, blackberry and plum with chocolate and spice underneath. It drinks beautifully now and has years of development ahead — and in magnum, that development comes slower and more gracefully still.
Serve with: grilled ribeye, roast lamb, venison, hearty stews, braised dishes or aged cheeses.
