      The Wine

      The Lur Saluces family has been making wine in Bordeaux since the eighteenth century, and Château de Fargues — acquired in 1959 — is a cornerstone of the estate. Sauternes is made in tiny quantities from grapes affected by noble rot, which concentrates sugar and acidity together, and Fargues is among its most exacting producers.

      The 2005 blends Sémillon and Sauvignon Blanc, aged 36 months in French oak. It is rich and unctuous but never cloying: intense ripe apricot, peach and honey with candied citrus and floral notes, a touch of vanilla and spice from the barrel, and a vibrant acidity that cuts cleanly through the sweetness. The finish is long, delicate and lingering — and this vintage is particularly celebrated for that balance.
