The recipe is unchanged in principle: the juiciest small white peach purée blended with the finest Italian Prosecco. What you get is effervescent, silky and instantly celebratory, and considerably more refined than the buck’s fizz it tends to replace. No mixing, no measuring — just chill and pour.

White peaches are less acidic and more floral than yellow, which is exactly what the original Harry’s Bar recipe called for. Substituting yellow peach changes the drink entirely.
Well chilled, in a flute or a small tumbler as they do in Venice. Give the bottle a gentle inversion before pouring so the purée is evenly through.
