Is Maraschino the same as those bright red cocktail cherries?
No — and the confusion is worth clearing up. This is a clear, dry distillate of marasca cherries, closer in character to a fruit eau-de-vie than to syrup. The neon cherries borrowed the name and very little else.
What does it taste like?
Sour cherry first, then a distinct bitter-almond note from the stones, with dried flowers and marzipan behind it. It finishes dry. Sipped neat it is bracing; a bar spoon in a cocktail changes the whole drink.
Which cocktails need it?
The Last Word, the Aviation, the Hemingway Daiquiri, the Martinez and the Brandy Crusta all fail without it. It is one of the few bottles that cannot be substituted — which is exactly why every serious home bar ends up owning one.
