      What is the difference between cachaça and rum?
      Most rum is made from molasses, a by-product of sugar refining. Cachaça must be made from fresh-pressed sugarcane juice, and only in Brazil. That gives it a greener, grassier character — closer to rhum agricole than to a Caribbean dark rum.
      Why cognac casks?
      A short rest in used XO cognac barrels softens the edges of a young cane spirit without turning it into an aged spirit. You get roundness and a faint vanilla lift while keeping the fresh green cane character that makes cachaça worth drinking.
      Does it really improve a caipirinha?
      Considerably. Most caipirinhas are made with industrial cachaça, which is why they taste of lime and sugar and little else. A properly made one gains texture, floral lift and length — it stops being a holiday drink and becomes a serious one.
