      Only eight varieties may legally be used. Quebranta is the workhorse of them all — non-aromatic, structured, and the backbone of the classic sour.

      What exactly is pisco?
      A grape brandy from Peru, distilled from wine and bottled without ageing. Where cognac and armagnac spend years in oak, pisco is rested in neutral vessels so the character of the grape survives intact. It is closer in spirit to a great eau de vie than to a brandy.
      Why does "never diluted" matter?
      Almost every other spirit is distilled strong and then watered down to bottling strength. Peruvian law forbids it — the distiller has to land the cut exactly at drinking strength. It is far harder to do and it leaves noticeably more texture and aroma in the glass.
      How do I make a proper Pisco Sour?
      50ml pisco, 25ml fresh lime juice, 20ml sugar syrup and one fresh egg white. Dry-shake without ice first to build the foam, then shake hard with ice and strain into a coupe. Three drops of Angostura on the foam to finish. It is one of the great sours, and Quebranta is the grape it was designed around.
