Why is Almas white?
It comes from rare albino sturgeon, which produce pale, near-translucent roe rather than the grey and black of standard grades. The colour is genetic, not a processing step.
Does it taste like other caviar?
It is markedly lighter. Where Beluga and Osciètre carry weight and iodine, Almas is delicate and restrained, which is precisely why it is served on its own.
How should I serve it?
Chilled, straight from the tin, with a mother of pearl, bone or horn spoon. Metal reacts with the roe. Nothing on the side — there is nothing to improve here.
