Domaine Sylvain Bzikot sits in Puligny-Montrachet, the village that gives white Burgundy its reputation. It runs to about fifteen hectares and is worked by Sylvain and Béatrice Bzikot; the family line traces back to a Polish immigrant who arrived in Burgundy in the 1940s and whose surname is still above the door.
A domaine's Bourgogne Blanc is the wine that tells you most about it. It comes off the younger or outlying parcels, it carries no grand appellation to hide behind, and it is made by exactly the same team in exactly the same cellar as the bottles costing five times more. Here that means a Chardonnay built on citrus and orchard fruit rather than oak — clean, taut and unmistakably Burgundian.

Leaner, higher in acid and more citrus-driven. Californian Chardonnay tends to be riper, fuller and more obviously oaked.
Should I lay it down?
No. Drink it young while the fruit is fresh — within a couple of years is ideal.
