Beluga (Huso huso) produces the largest eggs of any sturgeon — pearl-grey to near-black, delicate-skinned and remarkably creamy. Compared with Oscietra, Beluga is softer, milder and more buttery; compared with Baeri, it is noticeably larger and longer on the palate. It commands the highest price because the fish matures slowly, over many years.
Chill the tin, never freeze it. Serve with a mother-of-pearl, bone or horn spoon — metal taints the flavour. Keep accompaniments minimal: blinis, crème fraîche, or nothing at all. Allow 15–30g per person. Pour a crisp brut champagne such as Veuve Clicquot Yellow Label or ice-cold vodka.
