Nuiton-Beaunoy is based in Beaune and draws its fruit from growers across the Hautes-Côtes de Nuits and the Hautes-Côtes de Beaune — the higher, cooler ground behind the famous slope. Those vineyards ripen later and hold their acidity, which is exactly what you want in a Chardonnay meant to taste of fruit rather than sun.
The Réserve is vinified in temperature-controlled stainless steel and then left on its lees before bottling. No new oak is involved. The lees contact is what gives the wine its weight: it rounds the texture and adds a faint creaminess without ever covering the fruit underneath.

The wine rests on the spent yeast left over from fermentation. It adds texture and a soft creaminess, and it is how a steel-fermented white gains weight without going anywhere near a barrel.
Where are the Hautes-Côtes?
The higher ground set back from Burgundy's main slope, above the Côte de Nuits and Côte de Beaune. Cooler and later-ripening, which keeps the acidity fresh.
Is it oaked?
No. It is made in stainless steel, so the character comes from the fruit and the lees ageing rather than wood.
What does the Réserve mean here?
It is the producer's own designation for this bottling. In Burgundy "Réserve" is not a legally defined ageing term the way it is in Rioja.
