Sébastien Cathiard’s Aux Chaumes 2022 — biodynamic Pinot Noir aged over two winters, punching well above its appellation.
Sébastien Cathiard took over the family domaine in 2011 and has since made it one of the most talked-about estates in Burgundy. The 12.5 hectares are farmed biodynamically, and the wines are aged over two winters in barrel rather than the usual one — a slower approach that builds complexity and finesse.
Aux Chaumes sits on shallow clay soils over a hard limestone base, and that geology reads directly in the glass as freshness and minerality. The 2022 is rich but lively, and it is the kind of Hautes Côtes de Nuits that makes you question the hierarchy: it drinks well above its classification.
Serve with: roast chicken, duck, mushroom dishes or soft cheeses. Best enjoyed from 2026 to 2035.

The higher, cooler hills sitting behind the famous Côte de Nuits villages. Historically a value appellation, and increasingly a source of serious wine as growers like Cathiard work it properly.
Extended barrel ageing lets the wine integrate more slowly and build texture. Most Burgundy at this level sees one winter; two is a deliberate step up in ambition.
It opens from 2026. Younger than that, decant for an hour and it will show well.
