From Koshitsukano Shuzo, a Niigata brewery with nearly 240 years of sake-making heritage, the Gozu No Mine Junmai Ginjo is brewed at low temperatures using home-grown yeast, Agano River water and Gohyakumangoku rice a process that produces a sake of notable lightness and precision. Fruity aromas of banana, pear and melon are underpinned by a gentle rice character, leading to a smooth, well-rounded palate with medium acidity and excellent balance.
