      The Gin

      Anty Gin is a collaboration between The Cambridge Distillery and the Nordic Food Lab, and it is exactly what the name suggests: the world’s first gin to use ants as a botanical. The essence of precisely 62 Formica rufa — red wood ants, from Danish forests — is distilled into every bottle.

      The ants are not a stunt. Formica rufa produce formic acid, and here that replaces the traditional citrus peels entirely, giving a bright, lemony acidity and a tangy citrus lift that no fruit peel quite reproduces. Combined with juniper, coriander, angelica and orris, the result at 42% ABV is a crisp, dry, unconventional London Dry-style gin. It is produced in extremely small batches, because harvesting ants is exactly as labour-intensive as it sounds.

      No — the ants are distilled for their essence. What reaches the bottle is the flavour they contribute, not the insects themselves.

      What do the ants actually taste of?

      Formica rufa produce formic acid, which reads as a bright, sharp, lemony acidity. It stands in for the citrus peel that most gins rely on.

      Why is it so limited?

      Every bottle requires 62 individually harvested ants. The process does not scale, which is why batches are tiny and the gin is a collector’s piece.
