      Over twelve years of patient, artisanal sturgeon breeding at the Manufacture Prunier culminate in a caviar of exceptional rarity — Osciètre Noir represents just 10% of annual production. It is immediately distinguished by its deep black pearls, silky and creamy on the palate.

      Beneath that texture sits a delicate iodised character and a generous, long finish that speaks of French terroir and generations of savoir-faire. Every tin is vacuum sealed to preserve the nuance intact. The species is Acipenser gueldenstaedtii, raised and prepared in France.

      How does Noir differ from Supérieur and Héritage?
      All three come from the same species and the same twelve-year breeding programme. Noir has deep black pearls and a delicately iodised, silky character. Supérieur is lighter brown-grey and gentler. Héritage is the rarest, with large golden-brown pearls.
      What does French caviar mean here?
      The sturgeon are bred and the caviar prepared in France at the Manufacture Prunier, rather than imported and repacked. The house has been working with caviar since the early twentieth century.
      How should I store it?
      Refrigerated and unopened until you are ready to serve — the vacuum seal is doing real work. Once opened, eat it the same day, with a mother of pearl, bone or horn spoon.
