Wiston Estate Blanc de Blancs NV 75cl is an elegant, award-winning English sparkling wine from the family-run Wiston Estate in West Sussex, on the chalky South Downs escarpment near the sea. Established with plantings in 2006 and first wines in 2008, Wiston specializes in classic-method sparklers using traditional varieties and techniques inspired by Champagne. This non-vintage Blanc de Blancs is 100% Chardonnay, blending multiple vintages for consistency and depth, with the current release primarily built around 80% base wine from 2018 (a stellar warm vintage yielding high-quality, ripe fruit) plus reserve wines dating back to 2009. Grapes are whole-bunch pressed in a Coquard basket press, fermented in stainless steel and Burgundy oak barrels for complexity, then bottle-fermented with over 2 years on lees before low-dosage disgorgement (Spring 2021 or later releases around 8-9 g/l).
