    Should You Refrigerate Tequila, Whisky or Gin?

    No. Tequila, whisky, gin, vodka and rum are shelf-stable because they are bottled at around 35 to 40% ABV or more, so they never need refrigerating. Drinks House 247 recommends storing them upright in a cool, dark cupboard. Chilling is a matter of taste: it suits vodka and gin, but it mutes the aroma of sipping whisky and aged tequila.

    Nothing in a bottle of spirits can spoil the way food does. At the strength spirits are bottled, typically 35 to 40% alcohol or more, bacteria and moulds cannot grow, so a bottle of whisky or tequila is as safe in a cupboard as it would be in a fridge. The real question is not safety but flavour: whether cold makes a particular drink taste better or worse.

    What does cold do to a spirit?

    Aroma is carried by volatile compounds that evaporate from the glass. Cold slows that evaporation, so a chilled spirit smells and tastes of less. It also thickens the texture and dulls the burn of the alcohol.

    That is exactly why chilling works for some drinks and not others. For a neutral spirit such as vodka, where smoothness is the point, cold is an advantage. For a complex aged spirit, where the aroma is what you are paying for, cold hides the best part.

    Is it safe to keep vodka in the freezer?

    Yes. A domestic freezer runs at about minus 18°C, while a 40% ABV spirit does not freeze until roughly minus 27°C. Vodka comes out thick, syrupy and very cold, which is the traditional way to drink it neat. Gin behaves the same way and makes an excellent Martini from the freezer. Liqueurs and anything below about 25% ABV may freeze or turn slushy, so keep those out.

    Why you should not chill sipping whisky or añejo tequila

    An aged spirit spends years in oak developing vanilla, dried fruit, spice and wood. At room temperature those notes rise from the glass. Chilled, most of them disappear, leaving mainly the alcohol and a vague sweetness. If you want to take the edge off a strong whisky, a few drops of water do it better than cold: water opens the aroma rather than locking it away.

    A single ice cube is a reasonable compromise on a hot day, especially with higher-strength bottlings, but drink it before the ice fully melts and dilutes the spirit.

    What does need the fridge?

    A few bottles that sit alongside spirits in a home bar are different, because they are not strong enough to protect themselves once opened:

    • Vermouth is a fortified wine at around 15 to 18% ABV. Once opened it oxidises like wine. Keep it in the fridge and use it within a month or two. Stale vermouth is the most common reason a home Martini or Negroni tastes wrong.
    • Sherry and port follow the same logic as vermouth; fino and manzanilla sherry are best within a week of opening.
    • Cream liqueurs vary by brand. Follow the label, keep them cool and out of the sun, and finish an opened bottle within the time it states.
    • Tonic, soda and mixers lose fizz quickly once opened. Small bottles or cans are better than a large bottle that goes flat.

    How to store spirits properly

    • Upright, not on their side. Unlike wine, spirits should stand upright. High-strength alcohol can slowly break down a cork left in constant contact with it.
    • Away from light. Sunlight can fade colour and alter flavour, particularly in clear-glass bottles.
    • Somewhere cool and steady. A cupboard away from the oven, radiator or a sunny window is ideal. Around 15 to 20°C is perfect.
    • Keep the cap on. An open bottle loses alcohol and aroma to evaporation surprisingly quickly.

    Do opened spirits go off?

    Not in a harmful way, but they do change. The air inside the bottle slowly oxidises the spirit and lets aroma escape. A bottle that is still more than half full keeps well for years. Once it drops below about a quarter, the larger air space means a fine whisky or tequila can lose noticeable character within a year or two. If you have a special bottle down to its last few measures, it is better to finish it, or decant it into a smaller bottle, than to save it indefinitely.
