Blanco tequila (also called silver or plata) is bottled unaged or rested for less than two months, so it tastes most clearly of cooked blue agave: bright citrus, white pepper and fresh herbs. It is the classic choice for a Margarita or Paloma, and good 100% agave blancos are excellent sipped chilled.
Reposado ("rested") tequila spends two to twelve months in oak, which softens it and adds vanilla and caramel notes. Blanco keeps the fresher, peppery agave character. For cocktails most bartenders reach for blanco; for slow sipping many people prefer reposado or añejo.
