      What Happens When the Flor Dies
      1835
      Manuel María González founds his bodega in Jerez. His British agent, Robert Blake Byass, later joins his name to it — and the house has been González Byass ever since.
      The Flor
      A living cap of yeast that grows on young sherry, sealing it from the air. It is what keeps a fino pale and delicate.
      The Choice
      Fortify to around 18% and the flor cannot survive. The wine is left exposed to oxygen instead — and begins the slow darkening that makes an oloroso.
      The Solera
      Barrels stacked in tiers, each drawn from and topped up from the one above, so every bottle carries a trace of much older wine.

      Is this sweet?
      No — the opposite. Seco means dry, and Alfonso is completely dry. The confusion is understandable: most sherry sold in Britain for decades was sweetened cream sherry, which is a different product entirely. A dry oloroso is closer in spirit to a serious white wine than to anything sugary.
      What is the difference between fino and oloroso?
      Flor. Fino is fortified lightly, so a living yeast cap survives on the surface and shields the wine from air — keeping it pale and delicate. Oloroso is fortified harder, the flor dies, and the wine ages in contact with oxygen instead. That is what makes it dark, nutty and full-bodied.
      How long does it keep once opened?
      Because it has already aged oxidatively, it is far more robust than a fino. Recorked and kept somewhere cool it will hold up well for a month or more — much longer than an ordinary white wine.
