      How is Madeira different from port or sherry?
      All three are fortified, but Madeira is the only one deliberately heated and oxidised during ageing. That process gives it a piercing acidity none of the others have — which is why a sweet Madeira never tastes cloying, and why it survives being open almost indefinitely.
      What does Malmsey mean?
      It is the English name for Malvasia, the richest of Madeira's four noble grapes. The scale runs Sercial (bone dry), Verdelho, Bual, then Malmsey (sweetest). Malmsey is the one to start with — it is the most immediately generous and the easiest to love.
      Does it really keep once opened?
      Yes, genuinely. Because the wine has already been through heat and oxidation, air does very little to it. Recorked and kept somewhere cool, a bottle will drink well for a year or more. It is the ideal bottle for someone who wants one glass on a Sunday, not a whole bottle in a night.
