    Wines that pair with Pasta

    Pasta itself is neutral. The sauce does all the work, so pair to that and the rest follows. The Italian instinct — drink what grows where the dish comes from — is a reliable shortcut.

    By the sauce

    • Tomato — tomatoes are acidic, and a low-acid wine will taste flat beside them. Match acid with acid: Chianti, or any Sangiovese.
    • Ragù and meat sauces — more weight, more structure. Barbera, Montepulciano d'Abruzzo, or Barolo if the occasion justifies it.
    • Cream and cheese — carbonara, alfredo, quattro formaggi. Either cut the fat with a crisp white, or match it with a fuller Chardonnay. Soave Classico does the first well.
    • Pesto and herbs — basil and pine nuts are easily overwhelmed. Vermentino, from the same coast as the sauce, is the natural choice.
    • Seafood pasta — vongole, crab linguine. Stay white and unoaked: Gavi, Vermentino or a dry Italian white.
    • Arrabbiata and chilli — heat amplifies alcohol and tannin. Go lighter and cooler than instinct suggests, or reach for a chilled rosé.
