Portugal is home to two of the world's great fortified wines. Port comes from the steep terraces of the Douro Valley; Madeira from the Atlantic island of the same name.
Port is made by adding grape spirit during fermentation, which stops it early and leaves natural sweetness. Taylor's, founded in 1692, is one of the oldest Port houses.
Madeira is aged with gentle warmth, which makes it almost indestructible: an opened bottle keeps for months. Malmsey is the richest, sweetest style, with toffee, orange peel and a tangy finish. Blandy's has made Madeira since 1811.
Serve tawny and Madeira lightly chilled, at 12–14°C. Stand Vintage Port upright for a day, decant off its sediment and drink within two or three days. Tawny and LBV keep for several weeks once opened. Pair Port with Stilton, walnuts and dark chocolate; Madeira with fruitcake and crème brûlée.
