      The Sake

      Koshitsukano Shuzo has been brewing in Niigata for nearly 240 years, and Gozu No Mine is its Junmai Ginjo: brewed at low temperatures using the brewery’s own home-grown yeast, water from the Agano River, and Gohyakumangoku rice.

      Gohyakumangoku is Niigata’s signature rice, and it is what gives this sake its character — clean, light and precise rather than heavy. The slow, cold fermentation is where the fruit aromatics come from. The result is refined but genuinely approachable, which is a harder combination than it sounds. 15.5% ABV.

      What does Junmai Ginjo mean?

      Junmai means pure rice — no added brewing alcohol. Ginjo indicates rice polished to 60% or less. Together they mark a premium grade below Daiginjo.

      How is Gohyakumangoku different from Yamada Nishiki?

      Gohyakumangoku produces cleaner, drier, lighter sake; Yamada Nishiki gives more body and aromatic richness. Niigata built its reputation on the former.
