A Guide to Vermouth and Aperitifs

An aperitif is a drink taken before a meal to wake up the appetite, usually bittersweet, herbal and lower in alcohol than spirits. Most of these bottles are wine-based, so keep them in the fridge once opened and enjoy within a month or so.

    Vermouth

Vermouth is wine flavoured with herbs, roots and spices, traditionally including wormwood, and lightly fortified.

    • Sweet (rosso) vermouth: born in Turin. Carpano Antica Formula is rich, with vanilla and cocoa; Cocchi Vermouth di Torino is spicier, with orange peel. Essential in a Negroni and a Manhattan.
    • Dry vermouth: the French style. Noilly Prat, from Marseillan in the south of France, is the classic choice for a dry Martini.

    Other aperitifs

    • Lillet Blanc: a Bordeaux wine aperitif with orange and honey. Serve over ice with tonic and a slice of orange.
    • Aperol: a bright orange Italian bitter, the base of the Aperol Spritz.
    • Suze: a French aperitif made from gentian root, bitter and earthy. Try it with tonic.
    • Cocchi Barolo Chinato: Barolo wine flavoured with cinchona bark and spices, best after dinner, with dark chocolate.

    Three easy drinks

Aperol Spritz: three parts Prosecco, two parts Aperol and a splash of soda over ice. Negroni: equal parts gin, Campari and sweet vermouth, stirred over ice, with an orange twist. Dry Martini: gin with a dash of dry vermouth, stirred until ice-cold.
