    Oysters are the least forgiving pairing in food and wine. They are saline, delicate and eaten raw, so anything oaked, sweet or tannic will bulldoze them. What works is high acidity, low alcohol and a mineral edge.

    The three classics

    • Chablis — grown on Kimmeridgian limestone that is itself made of ancient oyster shells. The steely, unoaked style is the textbook match.
    • Muscadet — from the mouth of the Loire, where oysters are farmed. Light, saline and bracing, and usually the best value of the three.
    • Blanc de Blancs Champagne — all Chardonnay, no red grapes. The acidity and fine mousse scour the palate between each oyster.

    What to avoid

    Oaked Chardonnay, anything off-dry, and all tannic reds. Oak turns metallic against raw shellfish, sweetness flattens the brine, and tannin clashes badly.

    One traditional exception worth knowing: a dry Fino or Manzanilla sherry is an outstanding match, and rarely offered.
