Bargemone Cuvée Classique 2023 — night-harvested, cold-pressed, and estate-bottled in Coteaux d’Aix.
Commanderie de la Bargemone makes Provence rosé with precision at every stage. The vines grow on clay-limestone soils, and the fruit is harvested mechanically at night — cooler temperatures preserve the freshness that daytime picking loses.
From there it is directly cold-pressed, held at low temperature for around ten days, then fermented separately in temperature-controlled stainless steel before the final blend is assembled in December. That parcel-by-parcel approach is why the wine is so precise. Estate-bottled in the Coteaux d’Aix-en-Provence, at 13% ABV.
Serve with: tapenade, aioli, tapas, barbecue or fish platters — or simply as an aperitif. Serve well chilled, 8–10°C.

Cooler fruit arrives at the winery fresher, with less risk of oxidation or premature fermentation. For a pale, delicate rosé that freshness is everything.
Pressing whole fruit gently and cold limits skin contact, which is how the wine stays pale and keeps its delicacy rather than picking up colour and tannin.
Each parcel is fermented separately, so the final blend is assembled once every component has finished and can be judged on its own terms.
