      The Wine

Patrick Piuze is one of the most closely followed names in Chablis, a micro-négociant who works parcel by parcel to let each site speak for itself. La Grande Vallée 2021 is 100% Chardonnay, vinified in stainless steel so nothing stands between the fruit and the famous Kimmeridgian limestone beneath it.

The result is light to medium-bodied and razor-clean: lemon and green apple, white flowers, and the wet-stone minerality that makes Chablis unlike any other Chardonnay in the world. Bright acidity, no oak, and a finish that stays fresh rather than fading.

      Questions

      Is this oaked?

No. It is raised in stainless steel, which preserves the citrus fruit and the mineral character of the site.

What temperature should I serve it at?

8–10°C. Too cold and the minerality closes up, so take it out of the fridge a few minutes before pouring.

What makes Chablis taste so mineral?

The soils are Kimmeridgian limestone and marl, rich in fossilised marine shells — widely credited with the saline, wet-stone signature of the wines.
