Pearl size and delicacy. Beluga eggs are the largest of the classic varieties and the most fragile, with a texture that dissolves rather than pops. That combination is not reproduced by any other sturgeon.
What should I serve with it?
As little as possible. Straight from the tin over ice is the purest way. If you want an accompaniment, blinis and crème fraîche, and nothing beyond that.
How should I store it?
Refrigerated and unopened until you are ready to serve. Once opened, eat it the same day — delicate roe does not keep.
