The Dalmore, on the shores of the Cromarty Firth, matures its 12 Year Old first in American white oak ex-bourbon casks, then finishes it in 30-year-old Matusalem oloroso sherry casks from González Byass. The result is a notably rich single malt of orange marmalade and chocolate — crowned, as every Dalmore is, by the distillery's famous 12-point royal stag emblem.
