It's a single, unforgiving site — thin topsoil over slate and shale that keeps yields tiny and flavours concentrated. Most critics rank it as Australia's finest Riesling, and one of the great dry Rieslings of the world.
Should I drink it now or cellar it?
Both work. Young, it's electric — lime, flowers and stone. But Polish Hill is built for decades: ten or twenty years under screwcap brings toast, honey and extraordinary complexity.
How should I serve it?
Chilled to 8–10°C in a white wine glass rather than ice-cold — its detail deserves a little warmth to show.
