Yatir Winery is founded in the Judean Hills as a joint venture between local growers and Carmel — a small estate with a single ambition: to prove Israel could make a world-class red.
The Forest
The vineyards sit on the edge of Yatir Forest, Israel's largest planted forest — a green line holding back the Negev desert. The wine is named for it.
Altitude
At close to 900 metres, days are bright and dry but nights turn genuinely cold. That swing keeps acidity in the grapes and polish in the tannins.
The Flagship
Yatir Forest is the estate's top wine — a Bordeaux-style blend led by Cabernet Sauvignon, aged in oak and released only when it's ready. Kosher throughout.

Why is it called "Forest"?
The vineyards border Yatir Forest, Israel's largest planted forest, on the southern slopes of the Judean Hills. The trees hold the line against the Negev desert; the vines grow at its edge, close to 900 metres up.
Is Israeli fine wine actually taken seriously?
Yatir Forest is one of the wines that changed the answer to yes. It has been the country's benchmark red for two decades — a Cabernet-led blend with genuine structure that critics routinely score alongside far more expensive Bordeaux.
Should I drink it now or keep it?
Both work. Decant for an hour if you're opening it young; or cellar it — the structure and acidity carry it comfortably for a decade from the vintage.
