Joseph Gilbert planted the first vines here in 1847, and the site has been devoted to a single grape ever since. Now farmed by the Hill-Smith family, Pewsey Vale sits at around 500 metres — the altitude, and the cool nights that come with it, are why the wine keeps its nervy freshness in a warm country.

No — this is bone dry. Eden Valley is Australia's home of dry Riesling: all lime, flowers and steely acidity, with none of the sweetness people sometimes expect from the grape.
Can I age it?
Yes — Eden Valley Riesling is famous for it. Drunk young it's all fresh lime; given five to ten years under screwcap it develops honeyed, toasty depth while keeping its freshness.
How should I serve it?
Well chilled at 8–10°C. Its acidity and low-ish alcohol make it one of the best aperitif whites there is — and one of the great matches for spicy food.
