      1965
      Gilbert Miclo founds his distillery in Alsace, the French region that has always taken fruit spirits more seriously than anywhere else in the country.
      The Fruit
      Williams pears, picked ripe. The house now works through more than two thousand tonnes of fresh fruit in a year.
      The Distillation
      The fruit is fermented whole, then distilled gently in small batches. Cutting the spirit tightly is what keeps the pear clean rather than jammy.
      No Oak
      Rested in glass or neutral vessels, never wood. Eau-de-vie is bottled clear precisely so nothing stands between you and the fruit.

      Is this a pear liqueur?
      No — and the difference matters. A liqueur is sweetened and usually much lower in strength. An eau-de-vie is a distilled fruit spirit with nothing added: no sugar, no colour, no oak. It smells intensely of pear and then finishes completely dry, which catches most people out the first time.
      Why is it clear?
      Because it never sees a barrel. Colour in spirits comes from wood, and wood would bury the delicate pear character this is made to show. It is rested in glass or steel and bottled as it comes off the still.
      How should I drink it?
      Straight from the freezer, in a small chilled glass, after dinner. Do not warm it in your hand like a brandy — cold keeps the fruit aroma tight and the alcohol in the background. A very small pour goes a long way.
      Who is this a good gift for?
      The person who has every whisky and every gin. Eau-de-vie is a genuine blind spot in most British drinks cabinets, and a good Alsace poire is one of the most purely aromatic things you can put in a glass. Also excellent for keen cooks — it belongs in the kitchen as much as on the shelf.
