Etsu is distilled in Hokkaido, and this expression takes its identity from the water: crystal-clear deep seawater drawn from 450 metres below the Pacific surface off the Hokkaido coast, prized for its purity and subtle mineral content. It is an unusual thing to build a gin around, and it shows in the finish.
The base is neutral grain spirit, infused with traditional gin botanicals — juniper, coriander, angelica and citrus peels — alongside distinctly Japanese elements: yuzu, sansho pepper and green tea. At 43% ABV the result is crisp, refined and harmonious, with a saline thread running underneath that no European gin quite replicates.
Serve with: a clean tonic and a slice of grapefruit, or in a Martini. Neat over ice also works if you want the minerality unmasked.

Water drawn from 450 metres is exceptionally pure and carries a subtle mineral profile. In the glass it reads as a faint salinity on the finish, which lifts the citrus botanicals.
The juniper backbone is classic, but yuzu, sansho and green tea push it somewhere distinctly Japanese — more citrus and gentle spice than a London Dry.
Something clean and neutral. A heavily flavoured tonic will bury the yuzu and the saline finish.
