      The Wine

      Domaine Violot-Guillemard is run by Joannes Violot-Guillemard, the fifth generation of his family in Pommard, and it is one of the appellation’s rising names. The estate covers eight hectares, is certified organic, and is known for an unusual technique: vinification in small ceramic spheres, which are neutral in a way oak is not and produce wines of notable purity and precision.

      La Platière sits in the heart of the Pommard appellation on clay-limestone soils with Jurassic marls, giving the wine structure and minerality. The 2022 is 100% Pinot Noir and finds a genuinely difficult balance: supple and delicate on the one hand, lively, fresh and complex on the other.

      Ceramic is neutral — it adds no flavour and allows a small amount of oxygen exchange. The result is a wine that tastes of its vineyard rather than its vessel.

      What is Pommard known for?

      Structure. Pommard produces the firmest, most tannic reds of the Côte de Beaune. This bottling is a more delicate reading of that, without losing the backbone.
