      The Wine

Ridgeview has been making sparkling wine on the South Downs in Sussex since 1995, and this family-owned estate is one of the producers that established England as a serious sparkling region. The Blanc de Blancs is made exclusively from 100% estate-grown Chardonnay — hand-harvested, whole-bunch pressed, primary fermentation in stainless steel, then secondary fermentation in bottle and extended ageing on lees in underground cellars.

This is the magnum: 150cl, and a genuinely rare format for the wine. Large-format bottles mature more slowly because the ratio of wine to oxygen is lower, and the result here is a 2009 with exceptional depth and finesse compared to standard bottlings — plus a bottle that commands a table. Presented in a matte black gift box.

      Tasting Notes

NoseBright citrus zest, orchard fruit and white blossom, developing honey and toasted brioche with age.
PalatePale gold with fine, persistent bubbles — crisp and layered, with hazelnut and saline minerality.
      FinishLong, precise and mineral.

Serve with: oysters and shellfish, smoked salmon, or a table that needs an occasion.

      Questions

      Why does a magnum matter?

The larger volume means a lower oxygen-to-wine ratio, so the wine matures more slowly and more gracefully. Magnums of good sparkling wine are consistently better than their 75cl equivalents.

      Is this Champagne?

No — it is English Sparkling Wine from Sussex, made by the traditional method. Champagne is a protected French appellation.

How many glasses in a magnum?

150cl gives roughly twelve flutes — enough for a proper toast rather than a taste.
