      The Vermouth

      Noilly Prat has been made in the port town of Marseillan on the French Mediterranean coast since 1813, and the method has not been rationalised since. Carefully selected local white wines are aged outdoors in oak casks — exposed to sun, sea air and the changing seasons — before being macerated with a secret blend of twenty herbs and spices sourced from around the world.

      The other signature is dodinage, the hand-stirring process that marries the wine and the botanicals. Between that and the maritime influence, the result is a vermouth of real complexity: dry, elegant, with a saline thread that no indoor-aged vermouth reproduces. At 18% ABV, it is the classic Martini vermouth.

      Tasting Notes

      Do I need to refrigerate it after opening?

      Yes. Vermouth is a wine-based product and will oxidise. Keep it in the fridge and use it within a few weeks for the best flavour.

      What does outdoor ageing do?

      The casks sit exposed to sun, sea air and temperature swings. That slow, uneven maturation is what gives Noilly Prat its distinctive dry, slightly saline complexity.

      How much goes in a Martini?
