      The Wine

      Saint-Georges Côte Pavie sits on the Côtes of Saint-Émilion, the limestone slopes on the Right Bank that give Bordeaux its most perfumed, Merlot-led reds. This is a Merlot and Cabernet Franc blend aged in French oak barrels, and the 2012 has had well over a decade to settle.

      That age shows in the texture more than anything: the tannins have gone silky, the fruit has turned from bright to deep, and the oak has folded away into cedar and spice. A half bottle of properly mature Bordeaux is one of the more civilised things you can put on a table — enough for two glasses, no leftovers.
