Bibi Graetz is one of Tuscany’s true originals — an artist turned winemaker who built his reputation on old Sangiovese vines and a refusal to follow the conventional Tuscan playbook. Testamatta, literally “crazy head”, is his flagship: pure Sangiovese, aged in oak barrels.
The 2013 has had years in bottle to unwind, and it shows — the ripe cherry and wild berry of youth now layered with tobacco, leather and savoury herbs, all carried by Sangiovese’s trademark vibrant acidity. Full-bodied but energetic rather than heavy, with velvety tannins and a long, complex finish.
Serve with: Florentine steak, pappardelle with wild boar ragù, roast lamb with rosemary, rich tomato pasta, or aged pecorino with honey.
