Rare Cask exists because of an accident of nature. During routine cellar checks, LOUIS XIII’s cellar master discovered a single tierçon — a large old oak cask — whose eaux-de-vie had aged in a way no one anticipated, developing an aromatic profile unlike the house blend. Rather than fold it back in, the decision was made to bottle it on its own.
The name records the strength at which it emerged: 42.1%, higher than the standard bottling and part of what gives it such presence. Rich spice and luscious dried fruit lead, with oak and vanilla behind and caramel and honey on the nose. A cognac that rewards the curious — and a genuine rarity, since the cask cannot be replicated.
Serve with: dark chocolate, gourmet cheeses, roasted nuts, foie gras, grilled or roast lamb, or boldly spiced dishes.
