Anty Gin is a collaboration between The Cambridge Distillery and the Nordic Food Lab, and it is exactly what the name suggests: the world’s first gin to use ants as a botanical. The essence of precisely 62 Formica rufa — red wood ants, from Danish forests — is distilled into every bottle.
The ants are not a stunt. Formica rufa produce formic acid, and here that replaces the traditional citrus peels entirely, giving a bright, lemony acidity and a tangy citrus lift that no fruit peel quite reproduces. Combined with juniper, coriander, angelica and orris, the result at 42% ABV is a crisp, dry, unconventional London Dry-style gin. It is produced in extremely small batches, because harvesting ants is exactly as labour-intensive as it sounds.
Serve with: a good tonic for an adventurous G&T, or in a Martini. Neat over ice is the honest way to meet it.
